CHRISMONT Cabernet Sauvignon 2022
The Chrismont label is dedicated to classic European varietals, with this Cabernet Sauvignon the perfect fit. Made from fruit harvested off the renowned Jacko’s Block in the King Valley.
TASTING NOTES
COLOUR: Dark cherry red.
AROMA: Blackcurrant and boysenberry aromas combine with dried herbs, star anise and toasty oak.
PALATE: Plum and cassis fruit flavours on the front palate, moving to classic capsicum and green pepper with cedary oak and structured tannins.
WINEMAKER NOTES
The grapes are crushed and fermented in two batches; one on skins for seven days before being drained off, and the other fermented and left on skins for an extra four weeks extended maceration. These two variations help to show off the classic cabernet structure, while also assisting to maintain colour vibrancy and varietal flavours. The new wine is then racked into new and older French oak
Hogsheads for malolactic fermentation and 18 months maturation before being blended and prepared for bottling.” Warren Proft, winemaker
